It's really hard to try to stay in shape when dessert is always tempting me! I decided no matter what I'm going to make the best decisions I can when it comes to my food, which means tweaking recipes to fit my needs when I have people over for dinner. I made a no to low, depending on preference, added sugar apple pie like crumble and I was so impressed! Everyone loved it and I didn't have to feel guilty about betraying my health goals! Win-win if I do say so myself. I know, the picture does not do it justice.
I'm not sure about the rest of the country but it is hotttt here in Jacksonville, FL. Spring, thank you for showing face for about 2 weeks... next time feel free to stick around longer.
When I lived in South Florida we really only had 2 seasons, Deathly Hot and Warm, at least in Jacksonville we have Cool, Chilly, Warm, and Deathly Hot (can't avoid that one sadly). Hey, I'll take what I can get. This watermelon salad will cool you right off. It's perfect for BBQ weather (or basically the majority of the year weather if you're in Florida)
Bean dips are so very easy to make and are much more economical than purchasing them premade at the store. I recommend keeping a dip in the fridge, weekly, with some cut veggies for easy snacking!
This slaw will forever change the way you feel about cabbage. It is so flavorful, bright and robust it will be a great addition to any meal! It reminds me of South Florida with all of the tropical ingredients that come together for the perfect bite. Oh South Florida, this ones for you!
Green Sauce in my household can either mean a chimichurri style sauce that my dad used to make when I was growing up, or a honey-cilantro-chili sauce, sometimes even a mixture of both. Green sauce is a blanketed term for a delicious (yes, green) blend of herbs perfectly crafted to enhance any dish. I keep a big jar of it in the fridge and use it in salad dressings, over oven roasted vegetables, as a marinade for proteins, you name it. It's not only delicious but it is a fantastic way to get in a lot of chelating (metal detoxifying) greens like parsley and cilantro!
Now that I finally have some time to breathe I feel like I can catch everyone up on the last few months of my life!
I love root vegetables! Roasted up, yeah, that's the good stuff! These are made even better by brushing them with a delicious sauce that takes just a minute to whip up.
I had my first breast thermography scan done six months ago. I have no idea why it's taken me so long to finally do it. The key is to do it before anything suspicious happens (which I did!). And maintain scans annually to see changes in blood flow, lymphatic drainage and nodules to then catch something before it really becomes something. Thermography scans are in, mammograms are out. There is a ton of research out there in case you want to know specifics... you can literally spend all day reading studies.
The reasons why mammograms are no longer the golden standard are vast but here are two important ones:
1. They produce a high amount of false positives
2. They smash and stress some seriously fragile tissues, and if something is there, you absolutely do not want to compress it.
I'm sitting here at the kitchen island looking out at the huge picture window in the kitchen watching a Cat 3 hurricane go by. It's stunning. Nature is absurd. Because I still have power, and nothing that needs to be done (except hurricane party of course- my Floridian readers, you know what I'm talking about), I decided to blog- while the power is still on. So with that I leave you with this delight- Tiramisu Swirl Banana Ice Cream Sheet Cake! I love Tiramisu. It's in my blood. I can't help it. This is a different take: healthier and lighter that mimics the flavors of Tiramisu so delicately.
Ah! I can't believe how long it's been since I posted a recipe. There's a whole bunch of reasons why, ultimately life. My energy goes mostly to my job, then balancing that with trying to keep myself healthy and sane. Finding time for myself, my friends, my passions, my family. I've been writing a cookbook, a baby's first foods cookbook with an emphasis on health awareness. I can't wait to share that with you!
