I'm addicted to these green beans lately, a simple green bean saute with garlic and nutritional yeast- something way too obvious for me to pair by myself. My boyfriend likes to pretend he doesn't cook but he's extremely intuitive in the kitchen and this dish is all his.
I'm slowly getting on the green bean train. I truly go crazy for some good vegan green bean casserole, but anything else green bean related has always lacked appeal. Not until lately have I started liking green beans prepared in other ways. These beans are super easy to throw together, which for me is all the more reason to like them.
I'm a sucker for comfort food. One of the many pros to veganism is you're forced to make your own. It would be so much easier to buy comfort food from your local, say Boston Market, but that's not an option for us. Because of this we have the power to make sure our food, even our comfort food, is wholesome and good for our bodies without compromising on the taste.
