It's really hard to try to stay in shape when dessert is always tempting me! I decided no matter what I'm going to make the best decisions I can when it comes to my food, which means tweaking recipes to fit my needs when I have people over for dinner. I made a no to low, depending on preference, added sugar apple pie like crumble and I was so impressed! Everyone loved it and I didn't have to feel guilty about betraying my health goals! Win-win if I do say so myself. I know, the picture does not do it justice.
I'm sitting here at the kitchen island looking out at the huge picture window in the kitchen watching a Cat 3 hurricane go by. It's stunning. Nature is absurd. Because I still have power, and nothing that needs to be done (except hurricane party of course- my Floridian readers, you know what I'm talking about), I decided to blog- while the power is still on. So with that I leave you with this delight- Tiramisu Swirl Banana Ice Cream Sheet Cake! I love Tiramisu. It's in my blood. I can't help it. This is a different take: healthier and lighter that mimics the flavors of Tiramisu so delicately.
Granola is so delicious but it can be loaded with an insane amount of sugar when you purchase it from the store. This recipe is seriously easy and has just enough sugar to have a hint of sweetness, but not enough where it should come with a warning label! Plus, this recipe leaves room for creativity- you can really take the bare bones of this recipe and run with it! Add a little of this, a little of that, and you'll have your own favorite custom granola blend in no time!
It's pouring outside and golden leaves are falling to the ground with each gust of wind. It's a gorgeous view, to be honest. A cold front is coming and it couldn't be any more of a beautiful process to watch. It's the type of weather that calls for a creamy soup with notes of winter spices, like this one. This soup is start to finish in under 30 minutes but it's flavors are rich as if it's been simmering for hours.
These pancakes are perfect. My favorite pancake recipe thus far, and for many reasons. The first reason being that these pancakes are made without flour, and instead steel cut oats. They're incredibly fluffy, far fluffier than any other pancakes I've ever had. And they're made so quickly!! With so little ingredients! Dare I say these bad boys aren't bad for you either? It's true, take a lot at the ingredients list!
Alright, let me be the first to get this out of the way... I know this picture ain't pretty. But I can assure you it was delicious. I've been addicted to Tempeh Reuben ever since my Orlando Escapades with one of my dearest childhood friends... I swear I've tried just about every Tempeh Reuben that city had to offer. And so the love affair began. Now that I'm no longer gallivanting around Orlando in my free time the cravings just come out of the blue and hit my upside the head. Sometimes a girl just wants some Tempeh, ya know?
Hellooooo summer! Well, maybe not for you guys up in the North East but here in South Florida we have officially skipped spring! It's hot, getting humid, but still beautiful. When I think of summer there is one word that instantly comes to mind: blueberries. Every summer my parents would drop me off at camp in northern Maine and I would spend the afternoons swimming in the icy lake and picking wild blueberries with my camp friends. It was heaven. So whenever berries come into season I get beyond excited, as they always bring me back to my childhood. These pancakes are made with buckwheat, which is really not a wheat at all- it's a ground up seed, and turmeric which has incredible anti-inflammatory properties. The pancakes are drizzled with a warm blueberry maple syrup that truly ties the whole thing together.
Yesterday while swimming underwater I looked up and a sliver on sunshine illuminated the pool to a gorgeous turquoise blue. There was a magenta flower laying just a few inches below the surface, it's color amplified with the sun. It was precisely that moment when a stream of clarity came to me: the stressors I carry with me is baggage I choose to hold on to. I have the option to let it all go. Being overly analytical and a constant thinker makes it difficult for me to focus on this exact moment. I'm usually planning ahead, making deadlines for myself, often comparing my deadlines to everyone else's. Sometimes I catch myself and return to center by focusing on my breathing, reminding myself to be in the now . But it is usually a matter of time until I once again start living in this transitional state...you know the transitional period I'm sure- the one that that says: "Ill be less stressed after such and such" or "once I've accomplished such and such I'll find time to relax". The problem is, there will always be another 'such and such'. So we can choose to live transitionally, waiting for the next big thing to pass knowing there is always another big thing just around the corner or let it go and have faith in the journey. As long as we are actively working towards our goals, that is enough. Time frames do not matter as we are exactly where the universe needs us to be in this present moment. We are so blessed with an abundant amount of love and opportunity. Each day is a blessing and for me, yesterday was a reminder of that. Look towards everything in your life with gratitude because today you're alive and that in itself is magical.

Coconut bacon is severely underrated. It's ridiculously simple to make and can be added to salads, baked potatoes and soups to make a great dish even better. I often find myself just eating it plain because yes, it's that good. Oh man, but can you imagine this as a coconut Bacon BLT? The possibilities are endless.
This may be my new favorite go to snack. I had it for the first time yesterday when I got home from class and was rummaging through the fridge looking for something to eat. There was nothing. Well, almost nothing. There was a lone coconut milk plain yogurt and a box of organic blackberries. And so the coconut yogurt parfait was born.
