It's really hard to try to stay in shape when dessert is always tempting me! I decided no matter what I'm going to make the best decisions I can when it comes to my food, which means tweaking recipes to fit my needs when I have people over for dinner. I made a no to low, depending on preference, added sugar apple pie like crumble and I was so impressed! Everyone loved it and I didn't have to feel guilty about betraying my health goals! Win-win if I do say so myself. I know, the picture does not do it justice.
4 apples, peeled and sliced thinly
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon pink salt
1 tablespoon honey (TOTALLY OPTIONAL!)
3/4 cup finely ground almond flour
1/2 cup pecans, chopped
1/2 cup virgin coconut oil
1/2 teaspoon ground cinnamon
1 tablespoon Grade B maple syrup (TOTALLY OPTIONAL!)
Preheat oven to 400°F.
Grease a pie dish, set aside.
In a bowl add the peeled apples and toss with cinnamon, nutmeg, salt and honey (if using). Pour spiced apples into pie dish.
In another bowl melt the coconut oil, then mix the almond flour, pecans, spices and maple (if using) and adjust coconut oil and almond flour ratio to your liking (thicker vs thinner crumble).
Spoon crumble over the filling. Cover the top and bake for 20 minutes, remove top and continue to bake for another 15 minutes.
Remove from heat and allow to chill slightly before serving.
